 9 oz unsweetened shredded coconut
 7 oz condensed milk
 1 tbsp unsalted butter
 1 Large Egg
  tsp salt
 ¼ tsp vanilla extract

In mixing bowl add eggs, melted butter, condense milk and vanilla extract. Mix well.

In separate bowl mix together shredded coconut and salt

Add the coconut mixture to the wet ingredient and fold to combine.

Preheat oven 350 F
Line mini cupcake tin with liner and then fill 1 TBSP of the batter in each cavity
Bake for 10-13 minutes or until golden brown
